Salsa Variations
If mangoes aren’t in season, you can substitute two diced cups of pineapple. Feel free to swap jalapeño for serrano or use a mix of bell peppers for color.

- 2 ripe mangoes diced
- 1 red bell pepper diced
- 1/2 red onion diced
- 1 jalapeño seeded and minced (optional)
- 1/4 cup fresh cilantro chopped
- Juice of 1 lime
- Salt to taste
Instructions
- In a medium bowl, gently toss together all ingredients.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
